Simple Choc-Chip Cookies

There is a time for fancy and then a time to bake an old favourite…chocolate-chip cookies! Give this staple a go – it is sure to be a hit in the lunchboxes.

Ingredients
125g of butter or margarine, softened
1 cup of brown sugar
1 tsp of vanilla extract
2 eggs
2 cups of plain flour
1 tsp of baking powder
1/2 cup of chocolate chips
1 cup of desiccated coconut

Step One
Preheat oven to 180C.  Line a baking tray with non-stick baking paper.

Step Two
Combine the butter, brown sugar and vanilla extract together in a bowl and beat until creamy.

Step Three
Mix in the eggs.

Step Four
Stir in the flour, baking powder, choc-chips and coconut.

Step Five
Roll tablespoons of the mixture into balls (flattening slightly) and place on the baking tray, allowing for the biscuits to spread a little as they cook.

Step Six
Place in the oven and cook for 10-12mins or until lightly browned. Cool on wire rack. Makes approx. 30.
